Letter: Food trucks should have gluten-free options

I have gone to most trucks in Sudbury. The Trough (located outside the Plaza Hotel in Minnow Lake) is the only one to offer gluten-free buns and gravy. Food truck operators all say they want to provide gluten-free options that are as good as what they offer already, which I believe is a cop-out.

I don’t have a business degree, but I can tell you turning away customers because you don’t want to make room or have a product as good as the others is just bad business. It’s 2021. After I asked for gluten-free options, I was told at one food truck that there is "just a little bit" of gluten in food. Well, would you, sir, take just a little piece of peanut butter if you're allergic?

I had another tell me there’s no such thing as gluten-free gravy because gravy is made with flour. Well corn starch can be used in place of flour, and besides gluten-free gravy exists. With the amount of awareness out there, I find that there's just really no excuse not to provide options for dietary needs. 

Best part of all this is I myself am not gluten-free, but my wife is. I have an aunt who is gluten-free also. They both would like nothing more than to go places we all go and have options.
