My Thai Palace's Coconut Key Lime Pie mocktail

When My Thai Palace server Francesca Dallaire whipped up a refreshing mocktail to submit to the Sudbury and District Health Unit's Mocktail Mix-Off Challenge, little did she know she had created a winning recipe.

When My Thai Palace server Francesca Dallaire whipped up a refreshing mocktail to submit to the  Sudbury and District Health Unit's Mocktail Mix-Off Challenge, little did she know she had created a winning recipe.

"My aunt does a lot of travelling and I'm always asking her about the drink list at the places she visits,"   the college student said.

"I liked the creamsicle drink, so I decided to try making something with a cream base."

Dallaire was approached by My Thai Palace owners Mookie and Pipat Sripimolphan to come up with a drink after the health unit issued a mocktail challenge to local restaurants earlier this summer. Dallaire used her experience as a bartender and cruised the Internet for inspiration.

Entries were judged based on taste, originality, and presentation by members of the Fetal Alcohol Spectrum Disorder (FASD) Network and the Sudbury and District Health Unit. The purpose of the Mocktail Mix-Off - the first time the contest has ever been put on - was to raise awareness about fetal alcohol spectrum disorder and the importance of avoiding alcohol during pregnancy.

"Many women of childbearing age don't realize that there is no safe amount of alcohol to drink during pregnancy and that there is no safe time to drink alcohol during pregnancy," said Paula Ford, a public health nurse with the health unit, in a release.

"If alcohol is consumed during pregnancy, it can cause damage to the unborn baby. Even if the baby is born with no outward defects, serious behaviour and social problems can still appear later in life."

To help prevent FASD, pregnant women need the support of their partners and the entire community to avoid alcohol during pregnancy.

My Thai Palace owner Mookie Sripimolphan said that, since winning the contest, numerous people have ordered the mocktail. Mocktails are perfect for designated drivers, pregnant women, children, and others who choose not to drink alcohol.

For those who want to try the alcoholic version of the drink, Dallaire says she adds 2 oz of vanilla vodka to the mix.


Coconut Key Lime Pie Mocktail
1/2 oz Pina Colada Mix (found at the grocery store)
2 oz cream
1-1/2 oz lime cordial (found at the grocery store)
Crushed ice
Lime wedge and desiccated sweetened coconut for the rim
Lime slice for garnish

To make the drink:

Rim the edge of a glass well with the wedge of lime, then dip into desiccated sweetened coconut
In a shaker, combine pina colada mix, cream, lime cordial and crushed ice. Shake well and pour into prepared glass. Garnish with a lime slice.
