Weekly Recipe: Surprise Dad with feta-stuffed Greek burgers

You love Dad and he loves barbecue. So show him just how much with a twist on the traditional burger, grilled to perfection and he’ll never turn back.

“Ground turkey is now a staple on the grocer’s shelf making it easy to use in the creation of a truly unique burger,” says Heather Nahatchewitz from Turkey Farmers of Ontario. “Consumers should explore new options for burgers and add incredible flavour with this lean healthy protein.”

Prep time: 40 minutes
Serves 4
1 ¼ lb ground turkey
¼ cup bread crumbs
1 tsp dried oregano
½ cup kalamata olives, pitted and chopped
1 tsp lemon zest
1 tbsp lemon juice
1 egg
salt and pepper to taste
8 oz feta cheese

In a large bowl, combine turkey, bread crumbs, oregano, olives, lemon zest, lemon juice, egg, salt and pepper. Mix well.

Shape the turkey mixture into four equal balls. Insert thumb into centre of each meatball to create a pocket. Put two ounces of feta in the centre of each meatball and close meat around cheese. Shape into four burgers.

Grill burgers 5 to 7 minutes each side over medium or until the internal temperature reaches 170°F. Serve with Greek pita, tzatziki sauce, tomatoes and cucumbers.
