This healthy salad is bursting with fresh summer flavours. Local cook Vanessa Brosseau sent in this recipe that she says features “a very yummy salad dressing over baby spinach.” For an extra punch of flavour and texture, try adding toasted pecans and lemon zest.
Serves 4 as a side dish
Dressing:
1/3 cup salad oil
1/4 cup red wine vinegar
1/4 cup white sugar
1 tbsp poppy seeds
1 tbsp sesame seeds
1 tbsp mustard powder
1/4 cup fresh cleaned raspberries
Salad:
3 cups baby spinach, cleaned
1/4 cup light feta cheese, crumbled
1/4 cup raspberries
In a blender combine dressing ingredients. Blend on low for 1 minute.
In a large salad bowl, toss together spinach, feta and raspberries.
Alternatively, arrange salad ingredients on individual plates.
Pour dressing over salad and serve immediately.
