Weekly Recipe - Rhubarb crunch

This simple recipe is a great way to use up that rhubarb in your garden. It tastes great served warm with ice cream.

This simple recipe is a great way to use up that rhubarb in your garden. It tastes great served warm with ice cream.

Mix the following ingredients together in a bowl until crumbly:

1 cup flour
¾ cup rolled oats
1 cup packed brown sugar
½ cup melted butter
1 teaspoon cinnamon
Combine in a pot and cook over medium heat:

1 cup sugar
2 tablespoons cornstarch
1 cup water
Cook until thickened, then remove from heat and stir in 1 teaspoon vanilla.
Press half the crumb mixture into a 9-inch square baking pan.
Cover with 4 cups cut up rhubarb.

Pour sauce over fruit and top with remaining crumbs. Bake at 350 degrees F. for 1 hour, or until golden brown.
