Weekly Recipe - Wild blueberry pancakes

This homemade recipe beats any boxed pancake mix. You can stir any kind of fruit you desire into the mix, or combine several fruits together. You are only limited by your imagination. Makes about 10 medium-sized pancakes.

A cast iron frying pan, over medium heat, provides the perfect cooking environment for any kind of pancake, including ones of the blueberry variety. With blueberry season well underway, it’s a great time to take advantage of the fresh, tangy goodness this berry has to offer. Research is underway that explores the potential positive effects of blueberry consumption on cancer prevention, vision and cardiovascular health, as well as protecting the brain from age-related deficits like Alzheimer’s and dementia.

Makes about 10 medium-sized pancakes.

In a bowl, sift together:
1 cup flour
1 teaspoon sugar
3 teaspoons baking powder

In another bowl, mix together:
1 cup milk
1 egg
1 tablespoon oil

Pour wet ingredients into dry and stir to combine. Add about a cup of blueberries (fresh or frozen). Pull out your favourite frying pan and warm it up over medium heat. Brush the pan with oil or butter; ladle a scoop of pancake batter into the pan. Cook until edges are dry and bubbles appear on the surface of pancake (see picture at left.) Turn pancake and cook until golden on the other side.
